The wine, of which only 3,500 bottles are produced, is made by Italian enologist Federico Curtaz, and is bottled at the end of March of the year following the harvest. |

The grapes used to make this pale straw yellow colored wine with golden reflections, are selected from vineyards located throughout the Veneto region, in the northeastern part of Italy.
To the nose it offers subtle notes of fresh fruit and flowers, such as jasmine. The taste is fresh, elegant and well balanced with a pleasant aftertaste.
Serve at 10° to 12°C. (50° to 53.6°F.) as an aperitif, or paired with light summer dishes. Very good with young traditional Italian cheeses as well. |

The winemaking applies the 'in bianco', that is, 'without skin' method.
The grapes are harvested by hand and put in small cases. The bunches are then laid delicately on a conveyor belt that takes them to the destemmer, where the grapes are separated from the stems. the clean grapes are then directed to a pneumatic press where they are crushed.
The juice is immediately cooled down and, after 24 hours, decanted at controlled temperature (55.4 - 57.2°F, or 13 - 14°C) then allowed to ferment with selected yeasts, keeping the temperature under control during the whole process.
The must may rest for a few weeks 'Sur Lie' (with yeast) before being decanted. This method enhances the typical characteristic perfumes of the grape.
The color is straw yellow with green highlights. The scent is reminiscent of elder tree and black locust flowers. To the palate it is harmonic and velvety, vaguely reminiscent of almond.
Pairs well with hors d'oeuvres, soup, pasta, boiled meat and seafood-based recipes, especially with boiled fish. |

The late harvest method with withering on the vine used by Azienda Agricola T•E•S•S•A•R•I gives the "Le Bine Longhe" cru its characteristic, unique bitter flavor.
The vine branches are cut in mid September and the bunches are left to dry in the vineyards until late October / beginning of November.
Thanks to the pruning method applied, the controlled clearing and late harvest, this wine delivers the true, typical character of the Soave DOC.

The fermentation of this wine, which is produced in the hilly area between Treviso and Conegliano Veneto, continues its fermentation for approximately one month.
To the nose it brings fresh perfumes and aromatic fruity notes reminiscent of apple and peach. The color is pale yellow with greenish highlights. In the mouth it is pleasant, soft, slightly sapid and persistent. The perlage is fine and lingering.
Though in the US sparkling wines tend to be uncorked for special occasions only, in Italy the Prosecco is considered a wine to accompany the whole meal, from aperitif all the way through the main course. Serve from 8° to 10°C. (46.4°50°F.). |
